Personally, I like to call this salad Red Thigh Cabbage and yes, I’ve probably ruined a great title… but my motto with good food has always been:

“Once it crosses the kitchen line, it’s all mine!”

So, shouts out to the Fresh Choice Kitchens for a great recipe, title and all.

This is from their Many Hands cookbook, which I love.  To order:

Thai Red Cabbage Slaw

Serves 6  – it is 5 points per serving

  • 1 lb        red cabbage, cored and finely shredded
  • ½ cup     coarsely chopped mint
  • ½ cup     coarsely chopped cilantro
  • 4            green onions, thinly sliced
  • 2            cloves garlic, minced
  • 3 Tbsp    lemon juice
  • 1 ½ tsp   sugar
  • ½ tsp      salt
  • 1/2 tsp   pepper
  • 2 Tbsp    fish sauce
  • ¼ cup      vegetable oil
  • ½ cup      coarsely chopped peanuts
  • ¼ cup      sesame seeds, toasted

Combine the cabbage, mint, cilantro and green onion.

Stir the garlic, lemon juice, sugar, salt, pepper, and fish sauce together.  Slowly beat in the oil.

Pour over the cabbage mixture and toss well.

Toss in the peanuts and sesame seeds just before serving.  Enjoy!
