Amber — simple red lentil dal

I tried out a simple dal recipe last night from Michael Smith’s Chef At Home cookbook.  It was pretty tasty and very very user friendly.  Here is the recipe doubled, which includes one additional ingredient added by me:

— 3 cups split red lentils

— 6 cups water

— half can of diced tomatoes (my addition)

— 2 small onions diced

— 4 cloves of garlic, minced

— 2 tbsp of curry powder

—  handful of cilantro, chopped

— half a fresh jalapeno, minced

Put lentils, water, diced tomatoes, onions, garlic, curry powder and salt in a pot.  Bring to a boil on medium heat then simmer for 20 minutes (give or take).  Add a handful of chopped cilantro and half a fresh minced jalapeno to the pot and continue to simmer for another 10 minutes or so.

And. You’re. DONE.

Enjoy!
